Cola Cola Chicken

Ingredients :
Chicken Thigh (4pieces)
Seasoning :
Normal Coca Cola (1 can),
Onion(1 1/2Stalk),
Ginger(5 slices),
Garlic(6 Cloves),
Spring Onion(2Stalks),
Chili Padi (5 pieces),
Star Anise (2 pieces),
Chinese Cooking Wine (1 1/2 tbl spoon),
Light Soya Sauce (4tbl Spoon),
Thick Soya Sauce(1 1/2tbl spoon)。
Preparation:
Step 1:
Wash the chicken with tap water,run through with boiling water and keep the chicken with the boiling water in a container for a few minutes , use tap water to run through the partially boiled chicken to rinse off the excessive dirt on the surface
Mix the Chinese Wine, a pinch of salt, a bit of pepper together with light soya sauce, thick soya sauce & 2 to 3 tablespoon of coke, place the chicken into the bowl to marinate for about 30minutes.
Step 2:
Cut the Onion diagonally into about 1”length, discard the leave portion, Slice the Giner about 2mm thickness, cut the garlic in bigger pieces (not mince type), wash the Chili Padi.
Step 3:
Pour about 4 tablespoon of Oil into the Pot/Wok and heat the oil up to 50%.
Step 4:
Place the marinated meat into the Pot/Wok to pan fry.
Step 5:
Keep turning the meat till all part/surface of the meat turned slightly brown.
Step 6:
Put in onion, garlic, ginger, star anise and fry them till the garlic turned slightly brown.
Step 7:
Pour in all the remaining coca cola.
Step 8:
Turn the fire to high heat till the gravy in the Pot boils, strain out the bubbles on the surface.
Step 9:
Turn the fire from high to medium after the gravy boils, do not need to cover the Pot/Wok.
Step 10:
While waiting for the food to be cooked, we can taste the gravy and adjust the sauce by adding additional soya sauce or sugar or water to our own desired taste. When the gravy is thickened (which may take about 10 to 15minutes after switching to medium fire), the food is ready to be served
Step 11:
Place the Chili Padi into the Pot/Wok for a final stir before removing the dish from the Pot/Wok
Step 12:
Place the cut Spring Onion for decoration purpose.
